Why test for Antioxidant levels?
Recent studies have shown that consumption of antioxidants may reduce the incidence of certain life threatening diseases, such as cancer and cardiovascular disease. Phenolics have been identified as potent antioxidants occurring naturally in many beverages. These compounds also contribute to quality characteristics such as colour, flavour and stability.
Testing for Antioxidants in Wine, Tea and Food
The TAS kit from Randox Food Diagnostics measures the antioxidant activity in beverages and provides a cost-effective method for rapid analysis of samples. This kit provides a useful tool for beverage companies to evaluate the phenolic content of their products, as phenolics appear to account for almost all the antioxidant activity in many beverages. Our TAS kit utilises the following highly specific enzymatic reaction:
ABTS® is incubated with a peroxidase (metmyoglobin) and H2O2 to produce the radical cation ABTS®*+. This has a relatively stable blue-green colour, which is measured at 600 nm. Antioxidants in the added sample cause suppression of this colour production to a degree which is proportional to their concentration.
